Sopa De Aguacate Recipe

Serve this Mexican soup ice cold in the summer or piping hot in cold weather. Use ripe avocados for best flavor. Add a couple drops of green food coloring at the end, if desired. Make sure broth is fat-free.

Recipe Ingredients for Sopa de Aguacate

6 c chicken broth
2 avocados
1 tortilla chips

Recipe Directions for Sopa de Aguacate

  1. If serving cold, place all ingredients in the blender, and chill until ready to serve.

  2. If serving hot, heat 1 cup broth and place in blender with pulp of one avocado. Bend to a smooth puree and then gradually add pulp of remaining avocado. Add this puree to the remaining 5 cups of broth and heat gently. Do not allow to boil. Correct seasoning, as it may need salt and perhaps a dash of cayenne pepper.

  3. Garnish with tortilla chips or fried tortilla squares.
