Recipe Ingredients for Soo's Version of Minestrone Soup-Adapted from Sunset

1/2 lb chicken backs
2 stalks celery
1 onion
3 oz fennel
12 cups water
1/4 lb Swiss chard
4 medium tomatoes
29 oz white kidney beans, divided in half
2 tbs olive oil
4 cloves garlic
3 medium carrots, peeled & cut to 1/4-in.
3 medium zucchini, peeled & cut to 1/4-in.
3/4 cup dry white wine
2 cups shredded green cabbage
14 1/2 oz garbanzo beans
1/2 cup parmesan cheese, shredded

Recipe Directions for Soo's Version of Minestrone Soup-Adapted from Sunset

  1. Put chicken backs, celery, onion & fennel into a pot with 12 cups water and boil for a day. Retain at least a 12 cup volume for the soup.

  2. Cut Swiss chard stalks in V-shape, chop and shred leafy part into ribbons. Separate and set aside.

  3. Boil tomatoes for a minute and peel, de-seed & chop.

  4. Blend 14.5 oz of cannellini beans (half) with a half cup of water and make a puree.

  5. Cook olive oil & garlic in pot. Add carrots, zucchini & chopped chard stalks. Cook until tender and then add wine with shredded cabbage and cook until cabbage is wilted.

  6. Add chard leaves, cannellini beans (half) garbanzos, parmesan rind (1/4 cup)--very little and barely noticeable even for lactose intolents--, and 12 cups broth from step 1. Cook for about 15-20 minutes.

  7. Serve hot. Top with parmesan cheese if not lactose intolerant.
