Makes 4 servings



Low calorie, low salt. Add 2 bay leaves (item not recognized by site) and the rind of any cheese for flavor. Does not melt into soup.

Recipe Ingredients for Soo's Mixed Mushroom Soup adapted from Body & Soul

1 tbs olive oil
1 large onion, diced
2 cloves garlic, minced
2 pounds mushrooms, your choice of varieties
1/2 tsp fennel seeds
1 tbs tomato paste
14 1/2 oz diced tomatoes, low salt
1/2 cup red wine
4 cups vegetable broth, low salt

Recipe Directions for Soo's Mixed Mushroom Soup adapted from Body & Soul

  1. Heat olive oil in pan.

  2. Add garlic & onions. Add salt & pepper. 5 minutes.

  3. Add mushrooms, 3 or 4 variety diced. 7 minutes.

  4. Add fennel, bay leaves, tomato paste, dice tomatoes, broth and red wine. Bring to boil then simmer for 30 minutes. Serve hot.
