yields 5 quarts - 20 cups. Each serving size is 2 cups, for a total of 10 2-cup servings. Each quart would be 496 calories.

Recipe Ingredients for Sooper Soup

5 quarts of low sodium chicken broth
2 cups water
1 cup dark meat chicken
1 cup dark meat chicken
1 cup light meat chicken
1 cup light meat chicken
2 cups chopped yams
2 cups chopped sweet potatoes
1 onion
8 celery stalks
8 oz chopped carrots
7 cloves of garlic
2 tablespoons olive oil
1 tablespoon salt
1 tablespoon pepper
3 tablespoons of cumin

Recipe Directions for Sooper Soup

  1. I make my stock from a store roasted chicken. I pull all the meat off of the bones, add water to cover + about 1 inch, then boil for at least an hour. I didn't add any extra salt, spices or vegetables, but you can do that too. I just was lazy this time.

  2. Chop all of your vegetables and place in bowls until you are ready to add.

  3. in a soup pot, fry onions, carrots and celery in olive oil. Add garlic and stir until fragrant and colors of vegetables are bright.

  4. Add stock, and everything else. Bring to a boil then lower to a simmer. Should be ready to eat in about 30 minutes.
