Recipe Ingredients for Sonia's Christmas Cake yummy

12 oz sultanas
12 oz currants
8 oz raisins
2 oz glace cherries (halved)
1 oz blanched almonds (shredded)
1 oz candied orange peel (shredded)
1 oz candied lemon peel (shredded)
60 g brandy (4 tbsp)
10 oz plain flour
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
2 tsp cocoa powder
7 oz butter (200g)
60 g lemon (grated rind)
1 orange (grated rind)
7 oz caster sugar
2 tsp black treacle
4 large eggs
1 oz ground almonds
454 g marzipan
750 g icing sugar
2 tbsp lemon juice
3 egg whites
2 tsp sugar (2 tsp glycerin, cannot find this in database, calories are similar)

Recipe Directions for Sonia's Christmas Cake yummy

  1. Line an 8" diameter deep cake tin with 3/4 thicknesses of greaseproof paper.

  2. Clean and prepare fruit. Place all in a large basin and sprinkle with half the brandy, cover and leave for 24 hours. Stir several times so that the fruit soaks up all the liquid evenly.

  3. Stir the flour with the salt, spices and cocoa powder and mix one third of it with the prepared fruit.

  4. Cream butter until soft, add grated orange and lemon rind, and the sugar, then beat until light and fluffy.

  5. Stir in the black treacle and beat in the eggs one at a time.

  6. Fold in ground almonds and half the remaining flour, add the fruit and brandy mixture and lastly the rest of the flour.

  7. Turn into cake tin, level the top and brush over with a little water.

  8. Bake at 325F for about 3.5 hours / 350F for about 3 hours.

  9. Leave for 24 hours to cool and rest.

  10. Cover cake with layer of marzipan.

  11. Mix icing sugar, lemon juice, 3 egg whites and 2 tsp glycerin, add water to make white icing. Cover cake.

  12. If making in advance of Christmas, add tbsp of brandy once a month to moisten cake and deepen flavour, and add marzipan and icing before serving.
