For those who like it "not so hot", omit the scotch bonnet pepper. This salsa is delicious as a dip with baked low-fat tortilla chips and as a topping for baked fish.

Recipe Ingredients for Some Like It Hot! Salsa

3 medium tomatoes
1 stalk celery
1 medium cucumber, peeled
1 medium sweet red pepper
1 medium red onion
10 basil leaves
10 sprigs cilantro
1/2 scotch bonnet pepper, finely chopped (optional, for those who like it hot)
1 cup vegetable juice
2 tbsp vinegar (I use rice vinegar.)
2 tbsp lime juice, fresh squeezed
1 fresh ground black pepper

Recipe Directions for Some Like It Hot! Salsa

  1. Coarsely chop all the vegetables by hand or in the bowl of a food processor.

  2. In a medium mixing bowl, combine the chopped vegetables with the liquid ingredients (vegetable juice, vinegar, and lime juice).

  3. Season to taste with fresh ground pepper.

  4. Refrigerate for 2 hours minimum before serving.
