Recipe Ingredients for Soft Pretzels

1 1/2 tbspn dry active yeast
1 tbspn honey
2 1/2 cups whole wheat flour
2 3/4 cups all purpose flour
1 tspn sea salt
2 large eggs

Recipe Directions for Soft Pretzels

  1. 1 mix 1 1/2 cup hot water, yeast, and honey in a bowl, set aside for 5 min

  2. Preheat oven to 475

  3. Mix whole wheat flour, 2 cups of all purpose flour, and sea salt. Add 1 egg and the yeast mix and mix until the dough comes together. Turn out onto a floured board. Knead 10 to 12 tiems adding up to 3/4 cup more flour if the dough is too sticky.

  4. Cut the dough into 4 equal portions, cover with a clean towel.

  5. On a floured board roll out one piece of the dough into an 14 x 11 rectangle, 1/4 in thick

  6. cut the dough into seven 11 x 2 in strips

  7. One at a time pinch the cut long edges of each strip together and roll into a 12 inch rope with your hands. Transfer the rope to a baking sheet lined with wax paper. and create the pretzel shape. Space 3 in apart. Let sit for 10 to 15 min.

  8. beat the remaining egg in a bowl an dbrush the pretzels with the egg and sprinkle with coarse salt if desired, bake for 13 minutes.
