Veganized from my mother's recipe

Recipe Ingredients for Soft Gingerbread

1 c sugar
1 c molasses
1 c canola oil
1 1/2 tbsp Ener-G Egg replacer powder
5 tbsp water
2 tbsp fresh ginger
3/4 tsp salt
1 tsp ground cloves
1 tsp cinnamon
2 c flour
2 tsp baking soda
1 c boiling water

Recipe Directions for Soft Gingerbread

  1. Preheat the oven to 350 F. Grease two loaf pans.

  2. In a large bowl, beat together the sugar, molasses, oil, egg replacer powder, water, and freshly grated ginger.

  3. In another bowl, stir together the salt, cloves, cinnamon, flour, and baking soda. Stir the dry ingredients into the wet. Add the boiling water and beat briskly until smooth.

  4. Pour into the loaf pans and bake 40-45 minutes.
