Low-fat, vegan soft ginger cookies

Recipe Ingredients for Soft Ginger Cookies (Vegan)

2 cups all-purpose flour
2 tablespoons ground ginger
2 tablespoons ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
1 cup brown sugar or sucanat
1/2 cup unsweetened applesauce
1/4 cup blackstrap molasses
2 tablespoon canola oil
2 tablespoon corn starch
1/4 cup water
1 tablespoon ginger, minced (optional)

Recipe Directions for Soft Ginger Cookies (Vegan)

  1. Preheat oven to 375°F

  2. In a medium bowl, mix flour, ground ginger, ground cinnamon, baking soda, and salt.

  3. In a small bowl, combine corn starch and water.

  4. In a large bowl, mix brown sugar, applesauce, molasses, 1 tablespoon canola oil, and fresh ginger. Stir together. Stir in corn starch and water mixture.

  5. Add dry ingredients to wet and mix until combined.

  6. Oil cookie sheet with remaining 1 tablespoon of oil.

  7. Scoop cookie dough into 15 equal balls, and place evenly on cookie sheet; flatten slightly.

  8. Bake for 9-11 minutes in preheated oven.
