Flavorful Spanish sauce that can be used as a sandwich topper, mixed in rice, etc.

Recipe Ingredients for Sofrito

2 lbs plum tomatoes
2 red bell peppers
2 medium yellow onions
5 garlic cloves
2 cups cilantro leaves
1/2 cup extra virgin olive oil

Recipe Directions for Sofrito

Coarsely chop tomatoes, bell peppers, and onions. Combine with 5 garlic cloves and cilantro. In batches, pulse mixture in food processor until finely chopped. In large pot heat olive oil over medium heat until simmering. Add mixture and cook until thickened and reduced, about 30 minutes. Refrigerate up to 2 weeks or freeze up to 6 months.
