A seasoning meant to enhance beans, soups, meats, and rice dishes in Puerto Rican cooking.

Recipe Ingredients for Sofrito

1 medium raw Bell Pepper Green
2 medium raw Bell Pepper Red
10 clove Garlic
1 medium White Onion
1 cup Cilantro
2 Medium Tomatoes

Recipe Directions for Sofrito

  1. Put roughly chopped vegetables into blender or food processor, and process til finer than a fine chop.

  2. Store in jar in refrigerator. When ready to use, heat small amount of oil in pan and cook sofrito until vegetables are soft, then add to beans, soup, meat, and so on.
