Soda Bread Recipe

Recipe Ingredients for Soda Bread

8 oz plain flour
8 oz Stone Ground 100% Wholemeal Plain Flour
1 tsp salt
2 tsp bicarbonate of soda
2 tsp cream of tartar
3 oz butter
1/2 pt milk
1 tbsp lemon juice

Recipe Directions for Soda Bread

  1. Preheat oven to 450F/230C/Gas mark 8.

  2. Mix flours, salt, soda and cream of tartar in a bowl. Cut fat into pieces and rub into flour to make fine crumbs. Make a well in the centre.

  3. Add milk and lemon juice and mix until smooth. Knead lightly. Shape dough into a round.

  4. Place on a greased baking tray or a silicone sheet and slash top with a knife to make a cross. Brush with milk and cook for 45 minutes. Cover with foil if overbrowning.

  5. Test, cool. Eat :)

  6. Variations:

  7. Onion Bread - Fry 12oz thinly sliced onions in 1oz butter until softened but not browned. Add half at end of stage 1 above. Brush loaf with beaten egg before cooking, and bake for 25 mins. Spoon over remaining onions and cook for further 20 minutes or until done.

  8. Herby bread - Add 4 tbsp chopped fresh herbs to dry ingredients of either of the above.
