Soba Noodle Salad with a Creamy Dressing

Recipe Ingredients for Soba & Veggie Salad

1/2 cups buttermilk, low fat
1 tbsp olive oil
2 tbsp chopped dill
2 tbsp chopped parsley
1 tsp grated lemon zest
1 tsp lemon juice
1/4 tsp fresh ground pepper
8 oz soba noodles
8 oz fresh sugar snap peas
1/4 cups shredded carrots
1 cup cherry tomatoes,halved
4 chopped scallions
1/8 tsp sesame seeds

Recipe Directions for Soba & Veggie Salad

  1. Chop all the vegetables

  2. Cook the soba noodles according to directions, drain and toss with the sesame oil while hot.

  3. Allow the noodles to cool to room temperature

  4. Mix the buttermilk, lemon zest, lemon juice and olive oil with the chopped herbs.

  5. Add the vegetables to the cooled noodles and top with the dressing.

  6. Stir gently to combine and chill until ready to serve.

  7. Garnish with toasted sesame seed is desired.
