Light vegetarian salad with nutty sauce

Recipe Ingredients for Soba tofu salad

2 1/2 oz dry soba noodles
1/2 cup shredded carrot
1/2 cup broccoli
1/4 cup shredded cabbage
1/4 cup green onion
4 oz extra firm tofu
1/2 tbsp sesame oil
2 tsp
2 tsp hot sauce
1 1/2 tsp vinegar
1 clove garlic
1 tbsp

Recipe Directions for Soba tofu salad

  1. Cook the soba noodles according to package directions

  2. In the last minute of cooking the noodles, add the vegetables to the boiling water

  3. Drain and rinse the noodles in cold water

  4. Drain the tofu and sqeeze out excess water, cube

  5. Mix the sesame oil, peanut butter, hot sauce, vinegar, minced garlic and soy sauce until smooth

  6. Add the sauce and tofu to the noodles and vegetables and toss until thoroughly mixed

  7. Garnish with sliced green onion
