2 serving Ka-Me Soba Stir Fry Noodles
0.5 package Extra Firm
2 oz Ponzu Sauce
1.5 cup Chinese Style Pea Pods
4 oz Carrots, Baby
2 stalk, medium (7-1/2" - 8" long) Celery
1 small Onions
0.5 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1.5 cup (8 fl oz) Water
14 grams Cornstarch

Recipe Directions for Soba, Tofu, Pea Pod & Pepper Stir Fry

  1. Cut the half slab of tofu in half, then slice each into six smaller slices. Then cut each of those six slices in half again, giving you tofu "logs" that are about 1/2-inch by 2-inches. Soak these in 1/4 cup ponzu sauce for 5-10 minutes. Meanwhile, heat 1 Tb rice bran oil in a large skillet or wok until hot but not smoking. Saute the tofu logs until lightly browned on all sides. Remove. Reserve ponzu sauce.

  2. Slice celery on the bias. Cut baby carrots into matchsticks (or buy matchstick-cut carrots in a bag and use those). Cut peppers into thin strips. Cut onion in half, then slice into half-rings. After removing tofu, add 1/2 Tb oil to pan and begin with the onions and pea pods. Then add the celery, peppers and carrots in order, giving each about 1 min to cook before adding the next ingredient. Stir frequently and when everything is well coated in oil and not sticking to the pan, cover and let steam a bit until crisp-tender. Remove from pan.

  3. Add last 1/2 Tb oil to pan and add soba noodles (these are "fresh" microwaveable noodles, not dry like spaghetti). Saute briefly, then add the reserved ponzu sauce and 1-1/4 cups water. Cook 1 min. Mix 1 Tb cornstarch with 1/4 cup water and mix well with noodles/sauce in pan, stirring constantly until thickened to desired consistency. It will get thicker as it boils.

  4. Gently stir tofu and vegetables back into thickened noodle mixture. Serve.
