Soba Stirfry Recipe

A yummy stir-fry with veggies and soba. Oh, and of course any meat or meat sub you like.... I used tempeh. A bit spicy.

Recipe Ingredients for Soba Stirfry

1/2 medium onion
1 large green bell pepper
2 tsp corn oil
2 cups frozen stir-fry vegetable mix
1 medium yellow squash, shredded
3 oz soba
1 tsp ginger, ground
1 clove garlic
1/4 tsp cayenne
3 tbsp soy sauce, reduced sodium
1/8 cup teriyaki sauce
1/2 tbsp cornstarch
1 tsp honey
1 tsp chili sauce
1 tbsp rice vinegar

Recipe Directions for Soba Stirfry

  1. Thaw frozen veggies by placing in a glass bowl and microwaving with a small bit of water.

  2. Place soba in boiling water and boil for 3 mins then drain.

  3. Heat oil, then add garlic, peppers, and onions. Add squash and veggies and saute until cooked through.

  4. Add soba, ginger, onion, and cayenne. Mix well and cook for 3 mins more.

  5. Mix soy sauce, teriyaki, vinegar, cornstarch, honey, and asian chili sauce in a small bowl.

  6. Add to stirfry and cook on high heat until well mixed.
