Soba Stir Fry Recipe

Usually I make this stir fry with a prepared yakisoba sauce that isn't yet in the CC database, so I didn't include it in this recipe. The nutritional info is for 1 of 4 servings.

Recipe Ingredients for Soba stir fry

8 oz. Eden soba noodles
1 1/2 cup baby bok choy
2 small carrots, chopped
1/2 white onion
1 cup bean sprouts
2 tbsp sesame oil

Recipe Directions for Soba stir fry

  1. Heat oil in a wok.

  2. Bring some water to a boil in a large pan.

  3. Boil soba noodles for 5 minutes.

  4. While noodles are boiling, add onions and carrots to wok and stir fry until onions are transluscent.

  5. When noodles are done, rinse and leave in strainer.

  6. When onions and carrots are ready, add bok choy and bean sprounts. Stir fry until bok choy begins to wilt.

  7. Add the noodles to the wok and toss with the vegetables until hot.
