Recipe Ingredients for Soba noodles with mango, jicama, carrots and broccoli

6.2 oz Authentic Japanese Buckwheat Noodles
1 fruit without refuse Mangos
0.33 large Yambean (Jicama)
2 medium Carrots
4 cup, chopped Broccoli
1 package Extra Firm
3 tbsp Olive Oil
6 serving Soy Sauce
0.25 cup, packed Sugars, Brown
8 tsp Ginger Root
3 tsp Garlic
0.13 serving Orange Juice
1 tsp Sriracha Hot Chili Sauce
1 tbsp White Wine Vinegar, Organic
0.33 tbsp Olive Oil

Recipe Directions for Soba noodles with mango, jicama, carrots and broccoli

Peel carrots, jicama and mango. Slice into long, thin strips (about the same width as the soba noodles). Chop broccoli. Drain and press tofu. Cook soba noodles according to directions on package (I use 2/3 of package). Stir fry tofu in 2 tbsp olive oil until brown and crispy on outside. Stir fry broccoli until bright green and tender. Add all ingredients to large bowl. Whisk all liquid ingredients plus brown sugar, garlic and ginger in bowl until combined. Pour over noodles and veggies. Stir until well-combined. Serve in large bowls.
