Soba Noodles with eggplant and mango (can add tofu)

Recipe Ingredients for Soba Noodles with eggplant an mango

1/2 cup rice vinegar
3 tbsp sugar
1/2 tsp salt
2 cloves garlic
1/2 red chili pepper
1 tsp toasted sesame oil
2 tbsp lime juice
1 cup sunflower oil
2 eggplants
9 oz soba noodles
1 mango
1 2/3 cup basil
2 1/2 cup cilantro
1/2 red onion

Recipe Directions for Soba Noodles with eggplant an mango

  1. In a small saucepan gently warm vinegar sugar and salt for up to one minute just until sugar dissolves. remove from heat and add garlic, chili an sesame oil. allow to cool, then add lime zest and juice.

  2. heat sunflower oil in large pan and shallow fry the eggplant in 3 or 4 batches. once golden brown remove to colander, sprinkle liberally with salt and leave to drain.

  3. Cook noodles. drain and rinse well under cold running water. leave to ry. in a mixing bowl toss noodles with the mango, dressing, half the herbs and onion. now you can leave this aside for 1 - 2 hours. when ready to serve ad the rest of the herbs then mix well.
