Recipe Ingredients for Soba Noodle Veggie Bowl

8 ounce Authentic Japanese Wheat Noodles
2 teaspoon olive oil
1 white and green parts, sliced 1/4 cup reserved for garnish scallions
2 tablespoon fresh grated ginger
10 ounces boneless skinless chicken breast, thinly sliced
1/2 pound broccoli florets (about 3 cups)
1/2 pound baby bella mushrooms, stemmed and sliced
1 red bell pepper, sliced and seeded
1/3 cup low sodium chicken broth
1/4 cup low-sodium soy sauce
1 teaspoon sesame oil
1/4 teaspoon crushed red pepper, or to taste

Recipe Directions for Soba Noodle Veggie Bowl

  1. Heat the olive oil in a wok or a very large skillet over medium heat. Add the scallions and ginger and cook, stirring, until fragrant but not browned, about 30 seconds.

  2. Meanwhile, bring a large pot of water to a boil. Add the noodles and cook according to the directions on the package. (Note: Soba noodles cook quickly?about 3 minutes. But it?ll take a few to get the water to boil).

  3. Add the chicken and cook, stirring occasionally, until just cooked through, about 4 to 5 minutes. Add the broccoli, pepper slices, broth, soy sauce, and cook, stirring occasionally, until the broccoli is bright green and crisp tender, and the red peppers are also crisp-tender. This should take about 5 to 6 minutes. When the the broccoli and peppers are almost done, add the mushrooms. They are fragile and tend to cook faster than the peppers and broccoli.

  4. Add the noodles and sesame oil and toss to combine. Divide evenly among the bowls, and garnish with reserved scallions.
