Recipe from Moosewood Restaurant Cooks at Home book; this book claims 203 calories per serving - I reduced the amount of soba noodles (recipe called for a pound), but the calorie count is still significantly higher, although in a more reasonable range.

Recipe Ingredients for Soba Noodle Salad

2 cups snow peas
271 4/5 g soba noodles
2 tbsp white miso
1/3 cup water
2 tbsp apple juice, unsweetened
2 tbsp sesame oil, dark
1/4 cup soy sauce
1 tbsp ginger root, grated
2 tbsp rice vinegar
2/3 cup chopped scallions

Recipe Directions for Soba Noodle Salad

  1. Bring a large covered pot of water to a rapid boil. Blanch the snow peas, uncovered, for a minute, until tender but still bright green. Remove the snow peas with a slotted spoon or strainer, place them in a large serving bowl, and set aside. Cook the noodles in the same water until just tender, about 3 minutes. Drain, rinse under cold water, and drain again.

  2. While the pasta cooks, prepare the sauce. In a small bowl, dissolve the miso in water. Whisk in the apple juice, sesame oil, soy sauce, ginger, and vinegar. Chop the scallions.

  3. In the serving bowl, toss the snow peas, sauce, and scallions with the noodles.
