My take on "Soba Noodle Salad" from Sunset magazine January 2004

Recipe Ingredients for Soba Noodle Salad

5 oz soba noodles
8 oz tofu, reduced fat
2 tbsp canola oil
1/2 cup carrot, grated
1/2 cup scallions, sliced
1 cup bean sprouts
1 tbsp toasted sesame oil
1/2 tbsp tamari, reduced sodium
2 tbsp rice vinegar
1 tbsp sesame seeds, toasted

Recipe Directions for Soba Noodle Salad

  1. Cook noodles in boiling water 7 minutes or until almost al dente

  2. Drain noodles and rinse them with cold water

  3. Slice tofu into three flat pieces and remove water by squishing with paper towels

  4. Fry tofu in the canola oil in a medium hot pan (tastes better if you put some toasted sesame oil, tamari and rice vinegar marinate in a bowl with them before cooking)

  5. Remove cooked tofu and drain in paper towels

  6. Mix tamari, sesame oil, rice vinegar in a bowl

  7. Remove half of the mixture from the bowl and put it in a small container

  8. Put noodles in the bowl with the remaining half of the sauce

  9. Grate the carrot (1 regular carrot) into the noodles, you can use a cheese grater

  10. Slice the white and green parts of two or three scallions and put in the bowl with the noodles

  11. Toss everything then add the bean sprouts

  12. Pour the other half of the dressing into the bowl

  13. Add the cooked and drained tofu to the bowl and toss

  14. Sprinkle sesame seeds into the noodles
