This recipe is modified from my mother's

Recipe Ingredients for Snickerdoodles

1 c vegan butter
1 1/2 c sugar
3 tsp Egg replacer powder
4 tbsp water
2 3/4 c flour
4 tsp baking powder
1/4 tsp salt
2 tbsp sugar
2 tsp cinnamon

Recipe Directions for Snickerdoodles

  1. Preheat the oven to 400 F.

  2. In a small bowl, blend the Egg replacer powder and water until fluffy.

  3. In a large bowl, cream together the vegan butter, sugar, and Egg replacer mix. Blend in the flour, baking powder, and salt.

  4. Roll into 1" balls. Dip one side of the cookie into a mixture of cinnamon-sugar. Place the cookies about 2 inches apart on the cookie sheet and flatten with the back of a spoon (to about 1/4" tall).

  5. Bake for 8-10 minutes, being sure not to overcook.
