A healthier version of this tasty muffin.

Recipe Ingredients for Snickerdoodle Muffins

1 c. whole wheat flour
2 c. white flour
4 T. white flour
1/2 c. splenda
4 T. splenda
4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1 c. skim milk
1/2 c. egg whites
1/3 c. unsweetened applesauce
1/3 c. canola oil

Recipe Directions for Snickerdoodle Muffins

  1. Put dry ingredients in large bowl.

  2. Combine wet ingredients.

  3. Make a well in the dry ingredients and add the wet all at once.

  4. Mix gently until moist.

  5. Put into sprayed muffin tins.

  6. Bake on 400 for 16 minutes.

  7. After removing from oven, you can spray on spray butter and sprinkle with cinnamon sugar to give it a crusty top.
