Ahh, lasagna. The ultimate party food. Only with this sneaky recipe, you can enjoy the party without as much guilt! How, you ask? By using low-fat tofu (which looks exactly like ricotta when mashed well or pureed) you can cut out half of the cheese, while adding nutrient-rich, high fiber, low-fat tofu. Trim some mozzarella from the middle, and you?re in business. Now before you get worried, let me just say right now, you?ll never miss what?s missing. The rich and bubbly cheese-covered top of the lasagna more than makes up for the lightened up layers. This is a great dish to serve for birthday parties or when you?re having people over for dinner. It feeds a lot of people, and everyone seems to love it. The recipe is packed with protein, calcium, fiber, folate, manganese, lycopene, and vitamins A, C, and K. Best of all, the lasagna can be prepared ahead, without baking, and refrigerated for a day. Or freeze it in plastic wrap with foil over it for up to three months.

Recipe Ingredients for Sneaky Chef Lasagna

1 cup ricotta cheese
7 ounces firm tofu
1/2 teaspoon salt
3 cups tomato sauce
12 sheets lasagna noodles
2 cups low fat mozzarella
1/4 cup Parmesan cheese
1 cup cauliflower
1 medium zucchini
1 teaspoon fresh lemon juice

Recipe Directions for Sneaky Chef Lasagna

  1. Preheat oven to 350 degrees and spray a 13-by-9 glass baking dish with oil. In a medium bowl, mix the ricotta with the mashed (or pureed) tofu and salt. In another bowl, mix the White Puree into the tomato sauce.

  2. To assemble the lasagna:

  3. Spread 3/4 cup of sauce on the bottom of the prepared baking dish.

  4. Place 3 pieces of uncooked pasta on top of the sauce, side by side (but not overlapping).

  5. Spread 2/3 cup of the ricotta/tofu mixture evenly over the pasta.

  6. Spread 3/4 cup of tomato sauce evenly over the ricotta, covering the pasta completely.

  7. Sprinkle 1/2 cup of mozzarella cheese over the top of the sauce.

  8. This is the first layer. Now repeat steps 2 through 5 two more times. Finally, top with the remaining 3 pasta pieces and spread the remaining tomato sauce completely over the top of the pasta, then sprinkle with the remaining mozzarella cheese and all of the Parmesan cheese.

  9. Cover lasagna with foil sprayed with oil. Bake 30 minutes. Uncover. Bake another 15 to 20 minutes or until the top is lightly browned. Let stand a few minutes before cutting.

  10. Make-Ahead Recipe: White Puree

  11. 2 cups cauliflower, cut into florets

  12. 2 small to medium zucchini, peeled and rough chopped

  13. 1 teaspoon fresh lemon juice

  14. 1-2 tablespoons water, if necessary

  15. Steam cauliflower in a vegetable steamer over 2 inches of water, using a tightly covered pot, for about 10 to 12 minutes until very tender. Alternatively, place cauliflower in a microwave-safe bowl, cover with water, and microwave on high for 8 to 10 minutes until very tender.

  16. While waiting for the cauliflower to finish steaming, start to pulse the raw peeled zucchini with the lemon juice only (no water at this point). Drain the cooked cauliflower. Working in batches if necessary, add it to the pulsed zucchini in the bowl of the food processor with one tablespoon of water. Puree on high until smooth. Stop occasionally and push contents from the top to the bottom. If necessary, use the second tablespoon of water to make a smooth (but not wet) puree.

  17. Makes about 2 cups of puree. Double recipe if you want to store even more, which can be done in the refrigerator for up to 3 days, or freeze 1/4 cup portions in sealed plastic bags or the small plastic containers.
