Recipe Ingredients for Sneaky Blueberry Muffins

2 eggs
1/4 cup sugar
1/4 cup grapeseed oil
1/2 cup canned white beans
2 tsp vanilla extract
1/3 cup flour
1/3 cup whole wheat flour
1/3 cup wheat germ
2 tsp baking powder
1/2 tsp cinnamon
1/2 cup oat bran
1 cup frozen blueberries

Recipe Directions for Sneaky Blueberry Muffins

  1. preheat oven 375 celcius

  2. whisk eggs & sugar until well combined

  3. Add oil, beans (pureed) and vanilla

  4. In another bowl, mix flours, wheat germ, oat bran, cinnamon, baking powder and pinch of salt.

  5. Fold dry ingredients into the wet gently, add blueberries (frozen).

  6. Do not overmix

  7. Bake for 20-22 minutes

  8. recipe makes 8 snack size (200 cal) muffins
