Recipe Ingredients for Snargie Red Velvet Muffins

1/2 cup organic brown sugar
8 tablespoons smart balance
1 1/2 cups lowfat milk
1/2 cup egg beaters
5 teaspoons vanilla extract
4 bananas, smashed
4 beets, roasted & pureed
4 cups whole wheat flour (mix/substitute any other flours)
1/4 cup raw wheat germ
1/4 cup flax meal
1/2 cup dark chocolate, melted
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon sea salt

Recipe Directions for Snargie Red Velvet Muffins

  1. Heat oven to 350 degrees.

  2. In a mixing bowl, combine the first seven ingredients.

  3. In a large bowl, combine the final "dry" ingredients and add gradually to the "wet" mixture in the mixing bowl.

  4. Pour into muffin tins with paper cups or greased muffin tins.

  5. Bake 23-25 minutes for regular-sized muffins, or 11-13 minutes for mini muffins.

  6. Cool.

  7. Store in an airtight container at room temperature for up to 2 days, one week in the fridge, or wrap individually and freeze for up to one month.
