Cucumbers, carrots and raisin marinated medley.

Recipe Ingredients for Snap Salad

2 cucumber+8-1/4" cucumbers
2 medium carrots, julienned
1/4 cup diced onion
2 tablespoons raisins
3/4 cup water
1/4 cup white vinegar
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika

Recipe Directions for Snap Salad

  1. In a large bowl, combine the cucumbers, carrots, onion and raisins. Combine remaining ingredients. Pour over the cucumber mixture; toss to coat. Cover and refrigerate for at least 6 hours. Serve with a slotted spoon.

  2. Yield: 6 servings. Prep: 20 min. + chilling
