Chicken, ginger, garlic, sesame, frozen veg... The recipe counter over estimated the chicken breast calories - I use about 4 medium sized frozen skinless chicken breasts out f a package. I also use Whole Foods' 365 Organics Soy Ginger or Hoisin Sauce. 15-20 calories, no fat, per tablespoon. Yum!

Recipe Ingredients for Snap crackle quick stir fry

25 ounces Chicken, Breasts, meat only, diced
14 ounces firm tofu, cubed
13 ounces mushrooms, canned
1 medium onion, diced
3 tbsp garlic, minced
1 tbsp ginger, minced
32 ounce mixed vegetables, frozen
10 ounces red cabbage
1/4 cup sesame seeds
2/3 cup green onions, diced

Recipe Directions for Snap crackle quick stir fry

  1. In a hot wok sprayed with non stick spray, saute the onions and garlic until tender, then add the mushrooms and ginger.

  2. In a separate frying pan, cook the diced chicken (add some minced garlic from a bottle). In the oven at 350, place the cubed tofu on a cookie sheet and bake for 45 minutes or until golden.

  3. Add the cabbage to the mushrooms, garlic, ginger, and onion and cook for another 5 minutes. Add the frozen stir fry vegetables and cook for about 7-8 minutes.

  4. (To make your own sauce: if you can, drain off excess liquid from the wok into a separate container. Add 2 tsp. of cornstarch, 1/4 cup apple juice, 2 tbsp. soy sauce, some honey, and some garlic and heat in the microwave for 30 seconds to make a great sauce).

  5. In another skillet, roast the sesame seeds until they begin to pop and turn golden, at which point you swirl them around in the pan for about 30 secs and then dump them in the vegetable mixture. Add the cooked chicken and tofu and cook for another 5-7 minutes. chop the green onions, and add the onions and sesame seeds to the vegetable mix and mix well.

  6. Serve with rice, udon, or tofu shiritake (local!) noodles topped with your homemade sauce.
