A spicy side dish, that slightly sweet from the carmelized onions. If you can't take the heat, leave out the jalapenos.

Recipe Ingredients for Snap Beans with Mushrooms

19 oz green beans
10 oz red potatoes
1 medium onion (sliced)
1 cup mushrooms (chopped)
1/2 jalapeno pepper (minced)
8 oz chicken stock
5 cloves garlic (minced)
1/8 cup olive oil
1 salt and pepper to taste

Recipe Directions for Snap Beans with Mushrooms

  1. Steam green bean and potatoes until fork tender about 10 minutes.

  2. Meanwhile saute onions, garlic, jalapeno, mushrooms, salt and peppper in olive oil, until onions are lightly carmelized.

  3. Add chicken stock and reduce until most of the water is evaporated.

  4. Fold in green beans, and potatoes until well mixed.

  5. Serve.
