These oatmeal bars are kind of bready. The remind of the outside of Nutrigrain bars. I might try adding a little more sweetener next time (hence the optional brown sugar) -- that would make it more like an oatmeal raisin cookie.

Recipe Ingredients for Snacks: Oatmeal Raisin Bars

3 c. oats
2/3 c. whole wheat pastry flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
3/4 c. raisins
1/3 c. honey
1/3 c. brown sugar (optional, if you like sweeter bars)
1/3 c. canola oil
1 egg, beaten
3 T. orange juice
1 tsp. vanilla extract

Recipe Directions for Snacks: Oatmeal Raisin Bars

  1. Preheat oven to 350F.

  2. Combine oatmeal, flour, baking soda, salt, cinnamon, and raisins.

  3. In a small bowl, mix honey, brown sugar, oil, egg, orange juice, and vanilla.

  4. Mix wet and dry ingredients together.

  5. Using damp hands, press mixture firmly onto a lightly oiled cookie sheet, forming one large rectangle about 1/3-inch thick. Smooth edges with blade of your hands.

  6. Bake at 350F for 12-15 minutes until light brown and firm.

  7. Remove from oven and let cool.

  8. Cut into small rectangles.
