Recipe Ingredients for Snack - Curry Quinoa (Single Serving)

40 grams Quinoa, Cooked
5 grams scallions
1 gram Stevia Powder
1 1/2 grams Curry Powder
1/10 grams black pepper
4 grams lemon juice
24 3/5 grams romaine
44 4/5 grams Bok Choy

Recipe Directions for Snack - Curry Quinoa (Single Serving)

  1. Cook 25 grams dry quinoa in 50 grams water. Combine liquid and quinoa in a medium saucepan, bring to boil, reduc e to a simmer, cover snd cook until the grains are translucent and the germ has spiraled out from esch grain. Takes about 15 minutes.

  2. Chop scallions.

  3. Mix scallions, curry, stevia, black pepper, and 1 tsp (4 grams) lemon juice with finished quinoa.

  4. Serve over lettuce if desired!
