when you have a lot of yellow squash and basil and lover peppery goodness

Recipe Ingredients for Smothered Yellow Squash with basil

3 yellow squash
2 tbsp extra virgin olive oil
3 cloves garlic
1/4 cup onion
10 grape tomatoes
1/2 cup basil
1 salt and pepper
1/2 cup water
3 mushrooms

Recipe Directions for Smothered Yellow Squash with basil

  1. Slice squash 1/8 thickness

  2. On medium high, heat 1 tbsp of oil

  3. Saute 1/2 of squash about 5 min. Put in bowl

  4. Heat other half for 5 min, return cooked half

  5. Add garlic and onion and saute for about 1 min.

  6. Add salt, pepper, mushrooms, and water and simmer with cover til liquid evaporates, about 7 min.

  7. Add basil and tomatoes about 30 sec before done.
