Modified from Rachel Ray's "30-Minute Get Real Meals". This modified version uses less than 1/2 the flavored "saucy" butter, less oil, less chicken broth, and smaller steaks. I even save some of the steak for lunch the next day (with salad).

Recipe Ingredients for Smothered Steaks & Spinach Gratin

3 tbsp olive oil
1 cup onion, finely chopped
3 garlic cloves, chopped
20 ounce frozen spinach, thawed and drained
1/2 cup chicken broth
4 ounces Philadelphia cream cheese light
1/3 cup Swiss cheese, shredded
2 tbsp plain bread crumbs
1 tbsp Worcestershire sauce
1 tsp hot sauce
4 tbsp unsalted butter, softened
24 ounce sirloin steaks, 1" thick

Recipe Directions for Smothered Steaks & Spinach Gratin

  1. Preheat oven to 450 deg F.

  2. FOR SPINACH GRATIN: Heat medium skillet with 1 tbsp olive oil over medium-high heat. Add the onion, garlic, nutmeg, salt and pepper and cook for 2 minutes. Remove and reserve 1.5 tbsp of the cooked onion mixture to use in the saucy butter.

  3. To the remaining onion in the skillet, add the drained spinach, stirring to distribute the onion in the spinach. Next, add the chicken broth and continue to cook for 2 minutes. Add the cream cheese, stirring to distribute. Transfer the mixtrue to a small baking dish. Mix the shredded Swiss cheese with the plain bread crumbs. Top the spinach with the Swiss Cheese mixture and cook in oven for 12 minutes or until the top is golden brown.

  4. FOR SAUCY BUTTER: Add Worcestershire sauce, hot sauce, salt and pepper to the reserved onion mixture. Mix to combine, then add the soft butter. Mix to comine again and reserve in the refrigerator.

  5. FOR THE STEAKS: heat a large skillet over medium-high heat with the remaining 2 tbsp olive oil. Liverally season both sides of the steaks with salt and pepper. Add the steaks to the pan and cook for 5-6 minutes on each side. Remove from heat to a platter and top each steak with a tbsp of the saucy butter. Allow the meat to rest and the butter to melt for 3-5 minutes. Serve steaks with spinach gratin.
