Recipe Ingredients for Smothered Steak with Honeyed Red Onions

1/3 cup red wine vinegar
3 tablespoons honey
1/2 teaspoon dried thyme, crushed
1 red onion, thinly sliced
1 pound beef top loin or beef tenderloin steak, cut 1-inch thick
1/2 teaspoon cracked black pepper

Recipe Directions for Smothered Steak with Honeyed Red Onions

  1. In a medium bowl stir together the vinegar, honey, and thyme. Separate the ion slices; add to the vinegar mixture. Let stand while preparing beef; stir occasionally.

  2. Meanwhile, trim fat from beef. Cut into serving-size pieces (4). Sprinkle both sides of steak pieces with pepper, pressing into the surface of beef.

  3. In a large nonstick skillet cook steak pieces over medium-high heat for 10 minutes, turning once halfway through cooking. Remove from skillet.

  4. Add the onion mixture to the drippings in skillet. Cook over medium heat for 3 to 4 minutes or until onion is just crisp-tender, stirring occasionally. Stir snipped parsley into onion mixture. Remove from skillet; keep warm.

  5. Return steak pieces and any accumulated juices to skillet. Reduce heat to medium-low. Cook, uncovered for 2-5 minutes or until juices are slightly reduced and steaks are medium doneness (160 degrees), occasionally spooning the juices over teh steaks.

  6. To serve, transfer steak pieces to 4 dinner plates. Top with onion mixture.
