This is such a tasty recipe! Does require about 1 hour of marinating. Skip the bacon if you want to save on calories!!!

Recipe Ingredients for Smothered Chicken

4 chicken breast (I like to use 6 -7 cutlets instead)
1 tbsp vegetable oil
1 tbsp lemon juice
1 cup honey mustard dressing
48 g bacon (about 4 slices, pre-cooked/ready-to-serve bacon)
1 cup shredded colby

Recipe Directions for Smothered Chicken

  1. Toss chicken, 1/2 cup of the honey mustard, lemon juice, and vegetable oil in a sealable tupperware and refrigerate for at least one hour.

  2. Heat oven to 375 when ready to cook.

  3. Pan sear the chicken on medium-high heat. 3 minutes on each side.

  4. Arrange on glass baking dish.

  5. Pour remaining honey mustard dressing (I use low fat Newmann's) over the chicken

  6. Place cooked bacon slices on top of the chicken.

  7. cover with cheese

  8. bake for 20 - 25 minutes
