Recipe Ingredients for Smothered Cabbage Wedges

1 head cabbage
1/4 cup butter or margarine
1/2 cup finely chopped green pepper
1/4 cup finely chopped onion
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup mayonnaise
1 cup (4 ounces) shredded mild Cheddar cheese
3 tablespoons chili sauce

Recipe Directions for Smothered Cabbage Wedges

  1. Cut cabbage into 8 wedges, removing hard center core; place in a Dutch oven or kettle, cover, and cook for 10 minutes in a small amount of lightly salted boiling water.

  2. Drain well; place cabbage wedges in a 13x9x2-inch baking dish.

  3. Heat butter or margarine in a large skillet over medium low heat. Sauté green pepper and onion until tender.

  4. Add flour and cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper.

  5. Pour sauce over cabbage. Bake at 375° for 20 minutes.

  6. Combine mayonnaise, shredded cheese, and chili sauce; mix well.

  7. Spoon sauce over cabbage wedges, and bake 5 minutes more, until cheese is melted.
