Vegetarian burritos smothered in a green chili sauce.

Recipe Ingredients for Smothered Burritos

10 tortillas, ready to bake
14 ounces black beans
8 ounces Quorn pieces, chicken style
3/4 cup cheese, monterey jack
1/2 cup cheese, cheddar
2 tablespoons olive oil
1 onion
1 1/2 chili peppers, anaheim
1/2 red bell pepper
1 1/2 cup zuchinni
1 1/2 cup yellow squash
4 cloves garlic
1 teaspoon cumin
1/4 teaspoon cayenne
14 ounces green chili sauce

Recipe Directions for Smothered Burritos

Saute the vegetables and Quorn chicken pieces in olive oil; then add black beans and spices. Set aside. Using a non-stick griddle, fry the tortillas. Divide mixture evenly among the 10 tortillas, adding cheeses. Roll each and place in a 10x13 glass pan, with green chilli sauce under and over the burritos.
