I call them smorkies, because they are sorta like a s'more and a sorta like a cookie. Chocolate, peanut butter, marshmallows, and oatmeal take the center stage. If you want them to be firm and not crumbly, do NOT use Splenda, or at least use a Splenda/sugar mix.

Recipe Ingredients for Smorkies

1 cup whole wheat flour
140 grams regular instant oatmeal (5 packets)
1 teaspoon baking soda
1 teaspoon baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup Promise Light spread
2 tbsp honey
1/2 cup Dark Chocolate Dreams peanut butter
3/4 cup Splenda
3/4 cup packed brown sugar
1/2 cup lowfat buttermilk
1 teaspoon vanilla extract
2 eggs
1 3/4 cups Toll House Semi-Sweet Chocolate Morsels
1/2 cup chopped walnuts
100 grams marshmallows (minis or large cut into pieces)

Recipe Directions for Smorkies

  1. Preheat oven to 375 degrees.

  2. COMBINE flour, oatmeal, baking soda, baking powder, and spices in small bowl.

  3. Beat Promise, peanut butter, Splenda, brown sugar, buttermilk, and vanilla in large mixer bowl.

  4. Add eggs one at a time, beating well after each addition.

  5. Gradually beat in flour mixture.

  6. Stir in morsels, marshmallows, and nuts.

  7. Spread into greased baking dish or dishes (13x9" or two 9x9").

  8. BAKE for 20 to 25 minutes or brown around the edges. Let stand for 2 minutes; cut and serve.
