Comfort food, simple, yet nutritious and delicious. Squash blended smooth into sauce. 2% chesse and skim milk reduce the fat, whole wheat pasta increased fiber.

Recipe Ingredients for Smooth whole wheat Macaroni and Cheese with Butternut Squash

1 T butter
1 T olive oil
2 tbsp flour
1/4 tsp nutmeg
1 tsp salt
1/4 tsp ground pepper
1 cups fat-free milk
1 cup fat-free chicken broth
3 cups butternut squash, mashed
14 oz dry whole wheat macaroni
8 oz (Kraft 2%) sharp cheddar cheese, grated

Recipe Directions for Smooth whole wheat Macaroni and Cheese with Butternut Squash

  1. Preheat over to 350 degrees.

  2. Boil macaroni to manufacturer's directions. Set aside.

  3. In shallow roasting pan/baking dish, placed butternut squash (halved lengthwise) flesh side down with enough water to cover bottom of pan. Add enough water to cover bottom. Roast about 30-40 minutes until fork passes through skin easily.

  4. In large fry pan or wide pot, melt butter with oil, wish in flour and stir into paste. Cook 2 minutes.

  5. Add salt, nutmeg, pepper.

  6. SLOWLY add milk while wisking (to avoid lumps).

  7. Slowly stir in chicken broth, stir while it thickens. Take off heat when it begins to boil.

  8. Stir in grated/cubed cheese until melted.

  9. Add 3 cups of scooped-out butternut, breaking up and blending. I use stick blender in pan to emulsify smoothly.

  10. Combine sauce with macaroni, mix well. Place in oven for 20 minutes until bubbly.

  11. Optional: Add breadcrumbs and paprika/more cheese to top (changes nutritional information).

  12. NOTE: Nutritional information is counting full-fat cheese, not 2% cheese, so the numbers are a bit higher than actual. I could not find the 2% cheese to enter.
