Recipe Ingredients for Smoky Shrimp & Hominy Soup

1 tbsp olive oil
1 c. onions, chopped
1 c. carrots, chopped
1 c. celery, chopped
6 garlic cloves, minced
1/2 tsp. oregano
7 c. chicken broth
30 oz. hominy
1/3 c. crushed tomatoes
2 tsp. chipotle chile, chopped
1 lb. shrimp
1/2 c. cilantro, chopped

Recipe Directions for Smoky Shrimp & Hominy Soup

  1. saute first 5 ingredients until crisp-tender (about 10 minutes

  2. add next 4 ingredients and simmer on low for 30 minutes

  3. turn to medium heat and add shrimp, cook until opaque and pink. add chopped cilantro.

  4. Serve in bowls with a squeeze of fresh lime juice.
