I know it seems like a strange combination of flavors, but it's fantastic! Even better if you have the chipotle Tabasco sauce. Add water or more broth to make soup. Try it with different veggies!

Recipe Ingredients for Smoky Rice & Corn

42 oz. reduced-sodium chicken broth
1/2 c. cranberry juice
1/2 tsp. cocoa powder
1/8 tsp. ground cinnamon
1 tsp. Tabasco sauce
1/4 c. lemon or lime juice
1/2 tsp.black pepper
16 oz. corn, frozen
1 1/2 c. basmati rice
2 T extra virgin olive oil

Recipe Directions for Smoky Rice & Corn

Bring all but the last three inredients to a boil. Add corn and return to boil. Add rice and simmer covered 8-10 minutes. Serve with a drizzle of olive oil.
