Recipe Ingredients for smoky corn and kidney bean salad

4 ears sweet yellow corn
3 cup beans, kidney, canned
2 yellow peppers, chopped
2 cups roma tomatoes, chopped
1/2 cup cilantro
1 T olive oil
2 T lime juice
1 t sugar
2 t chipotle chili in adobo sauce

Recipe Directions for smoky corn and kidney bean salad

  1. cut corn off of cob and brown in skillet

  2. chop up everything else and add all together after warming roasted peppers first in skillet

  3. combine oil, juice sugar and chipotle chili for dressing

  4. add salt and pepper to taste.
