A hearty, tasty soup made quick by using rotisserie chicken and a a bag of microwave brown rice.

Recipe Ingredients for Smoky Chicken, Tomato, Brown Rice and Corn Soup

1 serving Extra Virgin Olive Oil
9 oz Fresh Chopped Onions
1 clove Garlic
2 serving Paprika Smoked
1 tsp Cumin
28 oz Tomatoes
1.5 cup, chopped or diced Chicken, Breast, Meat Only
32 oz Soup, chicken broth, canned, less/reduced sodium
1 cup Rice, Brown, Medium-grain, Cooked
1 cup Corn, Sweet, Yellow
1 cup Corn, Sweet, Yellow
2 serving, raw Cilantro
10 olives Krinos Pitted Kalamata Olives
1 pepper Peppers, Jalapeno
2 oz Lime Juice

Recipe Directions for Smoky Chicken, Tomato, Brown Rice and Corn Soup

  1. Heat oil in a large pot over medium heat. When hot, add the onion and cook, stirring until golden, about 10 minutes. Stir in the garlic and cook 1 minute. Turn off the heat and stir in the paprika and cumin.

  2. Add the chicken and tomatoes to the kettle with the onions and spices. Add broth and heat to simmering. Stir in the rice, corn, half the cilantro, olives and jalapeno. Heat, stirring over low heat.

  3. When soup is hot remove from heat and add lime juice. Ladle soup into bowls and add a dollop of yogurt. Sprinkle with remaining cilantro.
