1 cup kale 1 cup spinach 1 tsp nutritional yeast 1/2 cup extra firm tofu olive oil cooking spray 1/4 cup diced onions 1/4 cup mushrooms 1tsp nutritional yeast

Recipe Ingredients for smokey tofu scramble

4 oz Organic Tofu, Extra Firm
1 serving Cooking Spray 100% Extra Virgin Olive Oil
0.25 cup, chopped Onions
0.25 cup, pieces or slices Mushrooms
1 cup, chopped Kale
1 cup Spinach
1 tablespoons Nutritional Yeast
1 tsp Cumin Seed

Recipe Directions for smokey tofu scramble

  1. Prep Time: 5 minutes

  2. Cook Time: 10 minutes

  3. Ingredients

  4. Olive Oil cooking spray

  5. 1/2 cup extra-firm tofu, diced

  6. 1/4 cup sliced onion

  7. 1/4 cup mushrooms

  8. 2 cups spinach or kale

  9. 2 tsp. nutritional yeast

  10. 1 tsp. mesquite

  11. 1 tsp. cumin

  12. Directions

  13. On high heat, spray skillet with cooking spray. Add diced tofu.

  14. After two minutes of sizzling, add sliced onion, mushrooms and garlic.

  15. After three minutes, add spinach and another good spritz of cooking spray

  16. Once the spinach begins to wilt, add nutritional yeast, mesquite and cumin.

  17. Stir off and on for another five minutes to allow the flavors to blend.

  18. Serve and enjoy!
