Recipe Ingredients for Smokey Chicken with Oregano

1/4 cup plain flour
2 teaspoons smoked paprika
1 1/2 kg chicken pieces, such as drumsticks and thigh cutlets
2 tablespoons olive oil
84 g (1) lemon, cut into 4 wedges
1 large red onion, cut into 8 wedges
8 garlic cloves, unpeeled
5 g (4) fresh oregano
1 1/2 cups chicken stock
5 g fresh oregano leaves, to serve

Recipe Directions for Smokey Chicken with Oregano

  1. Preheat oven to 180C/160C fan-forced. Place flour and paprika in a bowl. Season with salt and pepper. Add chicken. Toss to coat.

  2. Heat half the oil in a heavy-based, flameproof baking dish over high heat. Add half the chicken. Cook for 3 to 4 minutes or until browned all over. Transfer to a plate. Repeat with remaining oil and chicken. Return chicken to dish. Add lemon, onion, garlic, oregano and stock. Bake for 45 minutes or until chicken is cooked through.

  3. Transfer chicken to a plate. Place dish over medium heat. Cook for 5 minutes or until sauce thickens. Remove oregano sprigs. Serve topped with oregano leaves.
