Recipe Ingredients for Smokehouse Chicken

1 1/4 lbs chicken breast, boneless, skinless
20 grams bacon
4 slices reduced fat swiss cheese
1/4 cup BBQ sauce
2 cloves of garlic, crushed
1 oz jalapeno peppers, fresh, chopped, seeded
4 oz onion, yellow, chopped
4 oz bell pepper, chopped, seeded
1 tbsp margarine or olive oil
1 tsp chili powder
1 pinch of salt
1 pinch black pepper
1 pinch red pepper

Recipe Directions for Smokehouse Chicken

  1. Heat oven proof skillet and add peppers, onions.

  2. Stir and cook just until softened.

  3. Add seasoned chicken breasts and brown quickly on both sides.

  4. Cover and bake at 350F for 30 minutes.

  5. Stir in BBQ sauce and just enough water to cover chicken and bottom of pan.

  6. Cover each piece of chicken with a cheese slice and add microwaved bacon on top.

  7. Return to oven for 10-15 minutes to melt cheese and heat through.
