Recipe Ingredients for Smoked Whitefish Salad Nicoise

12 oz small red potatoes
4 oz green beans (haricots verts)
2 tablespoons minced red onion
1 oz Olive Oil for vinaigrette dressing,
2 tomatoes, quartered
4 ounces salmon, chunked
2 egg whites, hard-cooked, quartered
6 pitted Kalamata olives

Recipe Directions for Smoked Whitefish Salad Nicoise

  1. Cook potatoes in boiling water until tender, about 10-15 minutes;

  2. drain. Let cool slightly. Cut warm potatoes into 1/4-inch thick slices;

  3. place in medium bowl.

  4. Cook green beans in boiling water until tender, about 5 minutes;

  5. drain. Add green beans and onion to potatoes.

  6. Pour 1/4 cup dressing over vegetables; toss to coat.

  7. Let stand 15 minutes or chill until serving.

  8. Arrange potato mixture, tomatoes, trout or salmon, and eggs

  9. on serving platter or individual serving plates; garnish with olives.

  10. Drizzle with remaining dressing.
