Recipe Ingredients for Smoked turkey tostadas

350 oz. diced tomatoes
25 onions, thin sliced
40 lbs smoked turkey breasts, shredded
200 corn tortillas
3 1/8 cups reduced fat sour cream
3 1/8 cup cilantro, chopped
25 cups shredded romaine lettuce
12 1/2 cups shredded monterey jack cheese
12 1/2 cups quinoa
25 tsp canola oil
13 onions, small dice
50 oz. green chiles
25 garlic cloves, minced
175 oz reduced-sodium chicken broth
3 1/8 cup pumpkin seeds
9 3/8 cup cilantro, chopped
6 1/4 scallions, sliced
25 tbs lime juice
1 tbs sea salt
10 onions, small dice
30 tomato, small dice
1 cup jalapeno, minced
4 cups lime juice
1/2 cup cilantro, chopped
1/2 tbs sea salt
25 avocado
6 red onion, small dice
1/2 cup jalapeno, minced
25 tbs cilantro, chopped
13 tbs lime juice
1/2 tbs sea salt
6 tomato, small dice
8 1/3 lbs dry pinto beans
1 cup garlic, minced
8 tomato, small dice
1 cup cumin
1/2 cup chili powder
1 tbs sea salt

Recipe Directions for Smoked turkey tostadas

  1. Guacamole: peel and pit avocados

  2. place in bowl with onion, jalapeno, cilantro, lime, and salt. mash until creamy

  3. stir in tomato

  4. Pico de Gallo: Small dice onion, tomato and jalapeno

  5. place in bowl with cilantro, lime juice and salt. mix well

  6. Refried beans: cover beans with water and bring to boil. drain

  7. return to pot. cover with 2" of water. Add half the garlic, tomato, cumin, and chili powder

  8. return to boil and simmer until beans are soft

  9. mash and add remaining garlic, salt and olive oil

  10. place over low heat and cook 30 more minutes

  11. Quinoa: Toast quinoa in a dry skillet until aromatic. transfer to a fine sieve and rinse

  12. heat oil in saucepan over medium heat. Add onion and cook until soft. add chiles and garlic cook 30 seconds. add quinoa and broth;bring to simmer.

  13. reduce heat, cover and simmer until tender and liquid is absorbed;20-25 minutes

  14. Add pepitas, cilantro, scallions, lime juice and salt. Fluff with fork

  15. Tostadas: preheat oven to 375 degrees

  16. bring tomatoes to boil and add onion. cook until soft and most of the liquid is evaporated;15-20 min

  17. and turkey and cook until heated through.

  18. coat tortilla with cooking spray and bake until crispy

  19. Assemble tostada by spreading thin layer of beans and topping with turkey, lettuce, cheese and sour cream. serve with guacamole and pico de gallo
