Recipe Ingredients for Smoked Salmon & Spinach Omellete

33 g egg white
10 g skim milk
50 g spinach, thawed and drained
25 g lowfat cottage cheese
3 g chives, chopped
25 g smoked salmon with peppercorn

Recipe Directions for Smoked Salmon & Spinach Omellete

  1. lightly beat egg white with skim milk. lightly season and set aside.

  2. Flake salmon.

  3. Warm spinach in small saucepan or microwave.

  4. Spray non-stick pan with cooking spray. Heat over medium flame. Add egg white mixture. Cook until set, lifting edge and tilting pan to let liquid run underneath. Sprinkle with psyllium husk or other fiber if desired. Spread cottage cheese on one side of omellete. Top with warmed spinach and salmon. Fold egg over top.
